White Sauce Pasta

This particular recipe recreates an all time favourite – pasta in white sauce.

Pasta is to Italians what rice is to Indians. Over the years, pasta has gained immense popularity all over the world for its ability to gel well with numerous ingredients. Creamy and yummy – it’s really a treat. And kids love this dish.

You can also turn this into a mock chicken pasta recipe by adding mock meat.

Preparation Time: 25 Minutes

Ingredients

  • 2 onions
  • 1 packet mushrooms
  • 1 red bell pepper
  • 1 yellow bell pepper
  • Pasta/penne
  • Fresh basil leaves
  • Oregano
  • Thyme
  • Rosemary
  • 3 tbsp garlic paste
  • Olive oil
  • Soy milk

Preparation

  • Heat olive oil.
  • Add the onions sauté them on low heat for 5 minutes.
  • Add mushrooms with all herbs (oregano, thyme, rosemary). Sauté till the water from the mushrooms evaporates.
  • Add the bell peppers and sauté for 4 to 5 minutes.

Tips

To thicken the sauce, mix ½ tsp of all- purpose flour or 2 tsp of cashew powder to 4 tbsp water, add this mixture to the sauce and keep stirring till you get the desired consistency. Increase the quantity of all purpose flour or cashew powder if required.

  • Add fresh basil leaves (cut fine) and leave for 2 minutes.
  • Add soy milk and stir gently for few minutes and add salt and pepper.

  • Heat 3 to 4 spoons of olive oil and with 3 tbsp garlic paste for 1 to 2 minutes and add the entire oil to the sauce
  • Leave it on the heat for 2 minutes and mix well. Boil the pasta and add olive oil to cover the pasta so it does not stick (sprinkle a bit of oregano for taste).
